Orange-Spiced Chicken
Preheat oven to 350°
Prepare 10 5-oz. chicken breasts: bone, skin, and cut them in half.
Combine in a pie tin:
- 1/2 cup flour
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp thyme
Coat the chicken with the flour mixture and bake for about ten minutes until almost done.
Combine in a large skillet:
- 1 cup orange juice
- 1 1/2 cups sliced peaches
- 2 T brown sugar
- 2 T apple cider vinegar
- 1 tsp nutmeg
- 1 tsp sweet basil
- 1 minced garlic clove
Bring ingredients almost to a boil.
Add chicken and cook over medium heat until chicken is done, about 10 minutes.
Serve over rice.
Serves ten.
